Dr. C, Neil's pediatrician asks us every time if we are eating enough vegetables. Else we should have juice plus. He is a nice dctor and we love him, but his obsession with juice plus is not very appetizing (no pun intended).
Anyway, this is a dish we have fairly regularly, at least once every two weeks.

Ha, just last night I was wondering how our household of 2.1 manages to eat 5lbs of carrots in two weeks or less. And that's just the carrots.
I love how everyone preaches you gotta have so many servings of this & that each day. If I ate every serving these people recommended, I would be a very fat person!! My poor little stomach cannot hold that HUGE amount of food all those servings add up to be. Pshaw on the doctors and food specialists for forcing this stigma on us of so many servings of this & that per day!
What are the 11? Carrot, jicama, cabbage, celery...I give up!
